Real Cool Baked Beans


Your party guests will rave over your baked beans with this recipe from Prudhomme's Lost Cajun Kitchen in Columbia.


2 small cans of Great Northern beans

2 small cans of dark kidney beans

2 small cans of butter beans

2 small cans of black beans

2 small cans of pinto beans

1 can of corn

1 medium onion

1 yellow bell pepper

1 red bell pepper

1 green bell pepper

1 or 2 cloves of garlic

1/2 jalapeno pepper

1/2 pound of bacon

1/2 bottle of molasses (Black Strap or Briar Rabbit preferred)

1/2 cup of ketchup

1/2 cup of mustard

3/4 cup of brown sugar

1 or 2 tablespoons of liquid smoke



Drain and mix the beans and set aside. Leave juice from one can aside to loosen if the beans are too thick. Chop the onion, peppers and garlic, finely chop the jalapeno. In a large pot, saute the bacon and chopped vegetables until the onions begin to caramelize. Stir to prevent sticking. Add all the canned goods and other ingredients and stir to mix completely. Lower heat and slow cook for over an hour.
