Enjoy a zesty chicken dish with fresh summer zucchini courtesy of Prudhomme's Lost Cajun Kitchen in Columbia.
Chicken breast, cut into chunks
1 lemon, zest and pulp
1 lime, zest only
Green onions, sliced
Green tomato, diced
Zucchini, cut 'French fry' style
Salt & pepper to taste
- Heat oil in skillet and add chicken.
- Add in zest of both lemon and lime.
- Add pinches of salt and pepper.
- Add chopped pulp of lemon.
- Add green onions, green tomato and zucchini.
- Add a little water and cover until done.
