
Chef John Reis of Hilton Harrisburg shares this recipe for a mouth-watering steak you won't soon forget.
Ingredients:
2 oz. bourbon
2 garlic cloves
2 oz olive oil
1 drop liquid smoke
2 tablespoons cider vinegar
1 pinch salt and pepper
1 pinch thyme
2 bay leaves
Directions:
Combine all ingredients and marinate for a few hours.
Drain steak well. Place on grill and grill for about 3 minutes.
Turn over and brush with the bourbon BBQ sauce. Close lid and grill for another 3-5 minutes or until it reaches a medium rare.
To serve, slice into thin slices and arrange on plate with your favorite vegetable. Ladle some BBQ sauce over it and top with fried onions
Fried onions
Ingredients
1 onion, peeled and sliced thin
½ cup buttermilk
1 cup flour
1 pinch salt
Directions:
Dip onions in butter milk and then flour, shake excess flour and fry onions in a 350 degrees oil until golden brown, drain into paper towels.
Bourbon BBQ Sauce:
Ingredients:
1/2 onion, minced
4 cloves garlic, minced
2 oz olive oil
3/4 cup bourbon whiskey
1/2 teaspoon ground black pepper
1/2 tablespoon salt
2 cups ketchup
1/4 cup tomato paste
1/3 cup cider vinegar
2 tablespoons liquid smoke flavoring
1/4 cup Worcestershire sauce
1/2 cup packed brown sugar
1/3 teaspoon hot pepper sauce, or to taste
Directions:
In a large skillet over medium heat, combine the onion, garlic, and oil. Saute until onions are translucent. Add whiskey and simmer for about 5 minutes. Mix in the ground black pepper, salt, ketchup, tomato paste, vinegar, liquid smoke, Worcestershire sauce, brown sugar, and hot pepper sauce.
Bring to a boil. Reduce heat to medium-low, and simmer for 20 minutes. Run sauce through a strainer if you prefer a smooth sauce.
