Almond Joy Chicken, from Prudhomme's Lost Cajun Kitchen in Columbia
1 lbs chicken breast
2-3 tbsp almonds, chopped
1 tbsp minced onion
2 tbsp fire roasted peppers, chopped
cooked bacon, chopped
1/4 tsp garlic powder
1 tsp paprika
1/4 tsp black pepper
1/2 tsp basil
1/4 tsp oregano
1/4 tsp thyme
1/2 tsp salt
1/4 cup lemon juice
1/4 cup cream cheese
1 & 1/2 tbsp butter
1/4 tsp cayenne pepper
in a small bowl, mix the following seasonings: basil, oregano, paprika, cayenne pepper, garlic powder, salt & black pepper.
Take chicken breast, pat down in seasonings on both sides.
Heat up oil in skillet & cook chicken breasts.. About 4 minutes each side
Remove chicken, keep liquids in skillet.
In the same hot skillet, add onion, fire-roasted peppers, cooked bacon and almonds - all chopped.
Saute a bit, add more garlic to taste
Add butter and a little cream cheese till it begins dissolving.
Add lemon juice.. Pour over chicken on plate
