Ham Party Balls from Midday Gourmet Sharon Prudhomme
Great leftovers recipe
1 cup cooked ham, chopped fine - you can also use turkey
2 tbls butter
2 tbls chopped onion, red or white
2 tbls chopped green onion
1/4 cup bread crumbs
2 tbls mustard
pinch each: red, white and black pepper
pinch of basil
2 tbls of parmesan cheese
1 tsp chopped olives
in a heated saute pan, add a bit of oil to prevent sticking.
Add all onion and olives, saute until soft... Then, add butter.
In a bowl, mix all other ingredients EXCEPT BBQ sauce. cook until brown.
Form mixture into balls.
Roll balls in more bread crumbs
Saute ham balls until brown.
Drain on a paper towel.
Serve with BBQ dipping sauce
