Green tomatoes are ready to go! Don't wait until summer is over to "use" them up before frost. Try a stir fry or sandwich!
Fried Green Tomato Sandwich
Ingredients:
- Fried green tomato sliced ¼ in. thick
- Flour-add 2-3 tbls. seasoning
- Bread crumbs
- Oil for frying
- Veggie seasoning or Cajun Blend
- Ciabatta (or your favorite bun/roll/bread)
- Pesto-store bought-any blend
- Lettuce
- Swiss cheese
- Egg & milk wash
Directions:
- Dip tomato slice in flour, then egg wash & into bread crumbs
- Heat oil in pan. When a crumb boils in oil, gently lay toms into pan. Turn with fork when both sides are golden brown.
- Remove and allow to dry on paper towels.
- Top with favorite dressing. Spread pesto onto bun top, add red tomato slice, Swiss, lettuce & fried green slice, close and enjoy!
Sauteed Green Tomato Medley with Chicken
Ingredients:
- 1-2 green tomato
- 1-2 red tomato
- Bermuda onion
- Kale (remove stem first)
- Jalapeno (2 slices)
- 2-3 mushrooms
- 1 tbls chopped garlic
- Handful of cooked 7 drained bacon
- Lemon Pepper seasoning
- Chicken Breast (approximately. 1 per person)
Directions:
- Season and grill chicken
- In pan, add just a bit of oil to prevent sticking. Add all veggies and seasoning and sautee on medium heat until green tomatoes begin to soften.
- Add to top of chicken and enjoy!
