What could be better on a crisp autumn day than the aroma of a fresh apple harvest in your kitchen? Enjoy this recipe for Citrus Apple Walnut Pork from Chef Sharon Prudhomme from Prudhomme's Lost Cajun Kitchen in Columbia.
Ingredients:
- 2 pork loins or chops - season both sides
- Pork seasoning
- 2-3 ounces of craisons
- Half to whole apple - skinned and sliced
- Orange pulp - from 1/2 an orange (can add slices)
- 2-4 ounces of walnuts
- 1/4 cup chopped onion
- Oil to prevent sticking
Directions:
1. In saute pan, add oil, seasoned pork and onion. Saute until onions begin to caramelize.
2. Add apple, orange, nuts and craisons.
3. Turn pork until firm, but don't overcook (About four minutes per side).
4. Plate pork over smashed cauliflower.
Smashed Cauliflower:
Ingredients:
- Cauliflower florets, steamed and mashed
- Butternut squash, steamed and mashed
- 1/4 teaspoon nutmeg
- 2-3 tablespoons butter
- 1 teaspoon vanilla
Directions:
1. Steam cauliflower and butternut squash.
2. Mash 'em up like potatoes.
3. Mix in the rest of the ingredients.
