As a dip or spread, hummus is delicious and whips up quickly. Try this Easy Hummus recipe from Chef Sharon Prudomme of the Lost Cajun Kitchen in Columbia.
Ingredients:
- 2 cans chickpeas
- 3 Tbsp. scallions
- 3 Tbsp. roasted red peppers
- 2 Tbsp. kale
- 1/2 tsp. salt (optional)
- 1 tsp. oregano
- 1 tsp. garlic
- 1 tsp. cumin
- 1/4 cup sesame seeds
- 1 tsp. Tabasco sauce
- 2 Tbsp. oil (optional)
Directions:
1. In a small pan, roast sesame seeds until they turn darker - note the great aroma!
2. Add all and process.
3. Turn into a bowl and serve with toasted pita points, carrots, tortillas, etc.
