Sesame Salmon Szechwan By Chef Jason "Country" Fulmer
8oz piece of fresh salmon 1/2 cup diced tomatoes 1/2 cup diced red peppers 1/2 cup diced mushrooms 1/4 cup fine chopped green onion 1/4 cup diced red onion 1 cup steamed broccoli florets 1/2 cup steamed baby carrots 1/4 cup steamed cut zucchini 1/4 cup steamed cut yellow squash 8oz cooked white rice 2tbs. grill or fish seasoning 4oz Szechwan sauce 1oz extra virgin olive oil
Season your fish on both sides and place on a hot grill. Turn your fish every 3-4 mins for grill marks on both sides
In a saute pan add olive oil, peppers, mushrooms and red onions. Let vegetables sweat for 2-3 mins.
Add the rest of the vegetables and cook for another 2-3 mins.
Add Szechwan sauce to the pan and toss together. Reduce heat, allowing everything to simmer in the pan.
Place your cooked rice on a dinner plate and then top that with vegetables from the pan. Top that with your cooked salmon.
