Baked Caramel Apple Oatmeal Crisp with Toasted Walnuts

This recipe can be served as breakfast (with milk!) or as a dessert (with whipped cream and/or vanilla ice cream!)

Ingredients:

  • 1 cup brown sugar
  • 1 cup oatmeal
  • 1 cup all-purpose flour
  • ½ cup melted butter
  • 3 cups apples, peeled and cubed
  • ½ cup natural applesauce
  • 2 tsp ground cinnamon
  • 1 cup walnuts (chopped or shelled)
  • caramel topping

Directions:

  1. Preheat oven to 350 degrees. Lightly grease an 8-inch square pan. (I used cooking spray.)
  2. In a large bowl, combine brown sugar, oats, flour, applesauce and butter. Mix. Place half of crumb mixture in pan. Spread the apples evenly over crumb mixture. Top with remaining crumb mixture.  Sprinkle with cinnamon and place walnuts on top.
  3. Bake in the preheated oven for 40 to 45 minutes, or until golden brown. (Mine took the full 45)
  4. Let cool. Drizzle with caramel topping. (I used a sugar-free topping and it was delicious and still very sweet!)
