Enjoy this recipe for Winter Kale Salad from D&D Produce at the West Shore Farmer's Market.
8 oz. of kale (any type)
½ cup of dried cranberries
1 Pink Lady apple
2 teaspoons of sesame seeds
Crumbled blue cheese
3 tablespoons of extra virgin olive oil
1 ½ tablespoons of apple cider vinegar
1 tablespoon of Dijon mustard
1 ½ teaspoon local honey
Blend all salad ingredients, except the blue cheese, together in a large bowl. Mix all dressing ingredients together in a separate small bowl. Add the dressing to the kale mixture and toss the salad to evenly coat the kale mixture. Transfer the salad to individual serving plates/bowls and top with desired amount of blue cheese.
