Red Velvet Cake

Enjoy this recipe for Red Velvet Cake from Greg Cordova, executive chef of Morrison Senior Living.


What you'll need:

Cake flour, 2 cups

Cocoa, 6 Tbsp.

Salt, 1/2 tsp.

Baking powder, 1 tsp.

Baking soda, 1/8 tsp.

Shortening,  4 oz.

Sugar, 1 1/4 cups

Skim milk, 1/2 cup (2)

Vanilla, 1 tsp.

Eggs, 3

Red color, 2 oz.


What to do:

1. Using a mixer with a paddle, add the flour, cocoa, salt, baking powder, baking soda and shortening. Mix on first speed and create a paste.

2. Add the sugar and cream. Add the milk and slowly mix for 8 minutes.

3. Add the second milk and eggs. Scrape the bowl and mix for 8 minutes. Add the red color and mix.

4. Using loaf pans, grease and sugar, pour in cake batter and bake at 350 degrees for 20 – 30 minutes.

5. Remove and turn over. Let the cake rest and cool.

5. After the cake is cool, cut into wedge slices.



What you'll need:

Egg whites, 6

Sugar, 10 Tbsp.


What to do:

1. Using a clean, dry mixing bowl, whip the eggs until white. Add the sugar slowly and whip until slightly stiff.


Chocolate Ganache

What you'll need:

Semi-Sweet chocolate chips, 16 oz.

Heavy cream, 1 pt.


What to do:

1. Using a sauce pot, bring the heavy cream to a boil. Add the chocolate and stir. Lower the heat by half, continually stirring until the chocolate is melted. Remove from heat and let sit at room temperature.

2. Place the meringue on the plate. Place the chocolate cake wedge on top. Pour the ganache over the cake and garnish with toasted pistachios and chopped dried pineapple.
