Citrus Herb Crust Mix

  • 1/8 ounce: fresh, grated lime rind
  • 1/4 ounce: fresh, grated lemon rind
  • 1/3 ounce: fresh, grated orange rind
  • 1/8 ounce: fresh oregano - minced
  • 7/8 tsp.: fresh rosemary - chopped
  • 1/8 ounce: fresh thyme - chopped
  • 1/4 ounce: fresh, Italian parsley - chopped

Directions:

  • Mix all ingredients until well combined.

 

Citrus & Herb Crusted Salmon

  • 3-3/8 ounces: citrus herb mix for crust
  • 1-3/4 ounces: fresh, orange juice
  • 1-3/4 Tbsp: fresh, lemon juice
  • 1/3 ounce: fresh garlic - minced
  • 1-1/2 lb. salmon fillets, skin-on
  • 1/4 tsp: kosher salt
  • 1/4 tsp: ground, black pepper

Directions:

  • Prepare Citrus Herb Crust Mix according to recipe.
  • Combine orange juice, lemon juice and garlic until well blended for marinade
  • Pat salmon dry and remove skin. Slice on the bias into 3 1/2 oz servings. Add to marinade. Stir to coat evenly.
  • Line sheet pans with parchment paper. Lightly coat with vegetable oil spray.
  • With one hand, remove fish from marinade and dredge show side of fish into citrus crust.
  • Using clean hand, remove from crust. Place fillets on pans, crusted side up.
  • Evenly sprinkle with salt and pepper.
  • Bake in a standard oven at 425 degrees for 5-7 minutes or until fish is firm.
