Thrifty Thursday Chicken Tortilla Soup

Thrifty Thursday Chicken Tortilla Soup from 3/27/14

  • 2 whole boneless, skinless chicken breasts (cooked)
  • 1 Tbsp. olive oil
  • 3 Tbsp. taco seasoning or chili spice
  • 1 cu. diced onion
  • 2 bell peppers, diced
  • 3 cloves garlic, minced
  • 1 10 oz. can Rotel tomatoes and green chilies
  • 32 oz. low sodium chicken stock
  • 3 Tbsp. tomato paste
  • 4 cu. hot water
  • 2 cans (15 oz can) black beans, drained



Sarah suggests shredding chicken in your stand mixer using the scraper/flat beater attachment and then adding all ingredients together. Cook on the stove for a short time or for a few hours in a slow cooker.


Optional Garnishes:

  • Sour Cream
  • Diced Avocado
  • Diced Red Onion
  • Salsa Or Pico De Gallo
  • Grated Monterey Jack Cheese
  • Cilantro
  • Tortilla chips
