Historic Preservation Trust's Grilled Baguette with Goat Cheese, Sorrel Pesto & Pickled Watermelon Radishes

Grilled Baguette with Goat Cheese, Sorrel Pesto & Pickled Watermelon Radishes from 4/30/14

Serves 6 as an appetizer


BEGIN WITH:

  • 1 Good Quality Baguette
  • 1 cup Goat Cheese


SORREL PESTO

Ingredients:

  • 4 Cups Sorrel
  • 1-2 Garlic Cloves
  • ¼ Cup Toasted Pine Nuts
  • 3 Cups Olive Oil
  • 1 tsp Salt


Directions:

  • Put garlic and pine nuts in the bowl of a food processor.
  • Pulse until chopped.
  • Place sorrel in the bowl and turn on low.
  • Slowly add the oil until combined. 
  • Scrape down the sides of the bowl, add salt and pulse again to combine. Keep covered until ready to use.


PICKLED WATERMELON RADISHES

Ingredients:

  • 1 bunch (about 3-4) medium sized watermelon radishes
  • 1 cup white wine vinegar
  • ½ cup water
  • 2 cloves garlic, smashed
  • 2 TBSP sugar
  • 1 TBSP sea salt
  • 1 tsp fennel seed
  • 1 tsp red pepper flakes (optional)
  • 2 tsp peppercorns


Directions:

  • Put all ingredients in a stainless steel saucepan.
  • Bring to a boil, reduce to simmer and cook on med low for 10 mins. Let sit.
  • Slice radishes to desired thickness, or cut into a dice. Put in a glass jar, or heavy duty Tupperware container. Strain the pickling liquid over the radishes.
  • Refrigerate for an hour before using. Can be stored covered for up to ten days.


TO ASSEMBLE ALL:

  • Slice baguette ½" thick on a bias.
  • Brush with olive oil.
  • Grill on a grill pan or a grill until slightly charred and toasted. (You can also just toast in oven at 350 on a baking sheet for 5 minutes if you don't want to grill.)
  • Smear 1 TBSP goat cheese on baguette.
  • Top with pesto and spread evenly.
  • Top the baguette with a few pickled radish slices, shaking any excess pickling liquid off before you place them on the toast.
  • Top with microgreens or a small sprig of mint if desired.
