8 raw bacon strips
4 (1-inch-thick) boneless pork loin fillets
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 cup condensed beef broth
1 teaspoon instant coffee granulesWhat To Do:
1. In a large skillet over medium heat, cook bacon 5 to 6 minutes, or just until it begins to brown. Remove bacon to a paper towel-lined plate; reserve pan drippings in skillet.
2. Wrap two bacon strips around each pork fillet; secure with a toothpick. Sprinkle both sides of each fillet with salt and pepper.
3. In the same skillet over medium heat, heat bacon drippings; cook fillets 5 to 6 minutes per side, or until browned. Remove fillets to a platter and cover with foil to keep warm.
